Winemaking notes
Hand-harvested at dawn between late August and September to preserve the grapes' full aromatic character. Temperature-controlled fermentation off the skins for at least 15 days. Aged 5 months in stainless steel tanks, followed by 2 months of bottle rest before release. An entirely stainless-steel approach that enhances the variety's natural texture, sapidity and freshness.
Viticultural notes
The "youngest of the ancient" Sicilian grape varieties, born from a cross between white Catarratto and Zibibbo, developed by Baron Antonio Mendola of Favara (1827–1908). Vines averaging 20 years of age, trained in the traditional bush system (alberello), south-facing at 80 metres above sea level on the Noto estate in Sicilia DOC. The 2025 vintage saw harmonious budding followed by a hot summer tempered by cooling winds and soil water reserves.
Tasting notes
Straw yellow with golden highlights. The bouquet is broad and expressive: broom flowers, yellow peach, sweet almond and light citrus notes, all typical of the Sicilian Grillo. The palate is full, rich, sapid and well-balanced with a beautiful texture and a mineral, persistent finish. A white wine that is both deeply characterful and immediately appealing.
Pairing notes
Serve very cold at 8–9 °C. A natural match for fish tartare, roasted fish, salads, antipasti and white meats. Also excellent with vegetarian dishes and seafood.
