Winemaking notes
Château Franc-Baudron is a flagship cuvée. It bears the name of the estate and represents the most important cuvée in the production. The grapes are destemmed and crushed, macerated for around three weeks, vinified in temperature-controlled stainless steel vats, aged for 12 months in barrels before blending, and rested in vats for six months before bottling.
Viticultural notes
Limestone soils on the plateaus, clay-limestone soils in the middle of the hillsides, and finally deep clay soils at the bottom of the hillsides. The estate has been committed to organic farming since 2010. No weedkillers or synthetic chemicals are used. Herbal teas and liquid manure are used to complement organic treatments. The soil is plowed every other row several times a year to loosen and aerate it. Manure is added to enrich the soil.
Tasting notes
Beautiful intense color. Notes of black fruit (blackcurrant, blackberry) and roasted coffee and spices (cinnamon, pepper). Powerful and rich on the palate with a beautiful tannic structure. As it ages, it develops aromas of undergrowth, leather, and strawberries, and offers a velvety mouthfeel.
Pairing notes
Serve with duck breast, beef tenderloin, venison or venison chops, grilled skirt steak, wild mushroom fricassee.
