Winemaking notes
The 2016 Blanc de Blancs comes from the white soils of Avize. After a hot, dry summer, the grapes underwent ideal ripening, revealing intense fruit and a silky texture. Harvest took place from September 15th to October 1st.
Viticultural notes
The 2016 vintage is marked by a contrasting climate: a cool spring followed by a hot summer. These conditions allowed optimal ripening of the Pinot Noir and Chardonnay grapes, resulting in great concentration and a rare balance between freshness and power.
Tasting notes
Golden yellow with a steady, fine effervescence. The nose offers aromas of white flowers, citrus zest, and a hint of iodine. On the palate, it’s creamy, fresh, and saline, with flavors of ripe, crunchy fruit. The finish is smooth, saline, and long.
Pairing notes
Serve chilled, between 46-50°F (8-10°C), to fully enjoy its marine freshness and finesse. It pairs wonderfully with seafood, grilled fish, or light, refined dishes. It can be enjoyed now or cellared for a few years.
