Aligoté's naturally generous yields require careful canopy management and strict yield control to achieve balance and concentration. Vinified in stainless steel tanks to preserve its natural freshness and aromatic purity.
Viticultural notes
100% Aligoté, a rare vitis vinifera variety originating in Burgundy, planted at Château des Charmes as early as 1978 — among the oldest in Ontario. Grown on St. David's Bench VQA, Niagara-on-the-Lake. Responsible and sustainable farming with rigorous canopy management to concentrate aromatics and preserve balance.
Tasting notes
Pale yellow with bright green highlights. The nose is fresh and inviting: green apple and fresh pear with fine mineral support. The palate is lively and precise, driven by vibrant acidity and a light, clean texture. The finish is crisp, refreshing and true to the variety's pure character.
Pairing notes
Serve well chilled between 8–10 °C. Perfect as an aperitif, on a sunny terrace, with grilled shrimp salads, oysters or light vegetable dishes. Also excellent in the kitchen — a splash brightens any risotto beautifully.
