Winemaking notes
At the end of September, the finest grape clusters are hand-picked and laid on bamboo racks in specially equipped lofts. By late January, the grapes have lost 35% of their weight, concentrating sugars and aromatics. This is followed by soft pressing, 45 days of fermentation in large Slavonian oak barrels or stainless steel vats, and malolactic fermentation. Aged 28 to 30 months in Slavonian oak (80%) and small Allier and Slavonian barrels (20%), then a minimum of 4 months in bottle.
Viticultural notes
From Masi's hillside vineyards on west and south-west facing slopes in the historic Valpolicella Classico communes of Marano, Negrar, San Ambrogio and San Pietro in Cariano. Friable red limestone soils with Cretaceous marl, ideal for concentrated, well-balanced grapes. The 2012 vintage was outstanding: a hot, dry summer produced healthy, small and widely spaced berries with excellent acidity and sugar levels — perfect for appassimento.
Tasting notes
Deep ruby red with brilliant reflections. The nose is intense and elegant: cherry and plum jam with spiced hints of cinnamon and cloves. The palate is firm yet beautifully supple, with velvety tannins and a marked acidity that balances the alcohol with great precision. The finish is long, full-flavoured and softly spiced.
Pairing notes
Serve at 20 °C in large Burgundy glasses. Decanting for at least 1 hour is strongly recommended. Perfect with grilled or roasted red meats, game and strong aged cheeses such as Parmesan. Outstanding as a meditation wine after dinner.
