Winemaking notes
Fruit was destemmed, chilled and transferred to our bag presses with the free run fraction separated for this wine. The juice was lightly clarified before a slow fermentation at temperatures
of 14 – 16°C using a selected yeast to optimise varietal expression.
After a short period on yeast lees the wine was blended, stabilised and filtered for bottling thus showcasing its fresh varietal fruit flavours
Viticultural notes
100% Riverland fruit. Harvest was determined in the vineyard by flavour development, sugar and acid levels. Harvest took place in the cool of the night to retain fresh fruit flavours and minimise oxidation before transport to our Yenda winery.
Tasting notes
Pale lime in colour with silver hues. Herbaceous aromas of peppermint and fresh rosemary meld with lemon sherbet notes. On the palate lush flavours of green apple, lime and pineapple flourish with crisp acidity providing a mineral aspect to the persistent finish
