Winemaking notes
The grapes are destemmed and gently crushed to avoid damaging the skins. The must is fermented at a controlled temperature of 24-26°C, with frequent pumping over and unloading. Malolactic fermentation takes place in oak barrels where the wine ages for a minimum of 6 months.
Viticultural notes
The vines are grown in the foothills of the magnificent mountains of the Belice Valley, western part of Sicily, and more precisely in the Gibellina hills 200-300m above sea level.
Tasting notes
The color is a deep ruby red with garnet reflections. Its complex and elegant aromas are highlighted by mineral and fruity touches (wild berries) nicely intertwined with delicate spicy notes. It is fresh on the palate, the tannins are silky and balanced and the finish is long.
Pairing notes
Pleasantly accompanies grilled beef or chicken, simmered or roasted meat, tomato pasta and pizza. Serve slightly chilled.
