Winemaking notes
Fermentation in steel vats with pumping over and maceration of skins at a temperature of 28 degrees. Temperature-controlled malolactic fermentation. 25% of the wine is aged in used barrels for 8 months, while the remainder is aged in steel vats.
Viticultural notes
The region is bordered by mountain ranges to the north, west and south, and by the Spanish border to the east. Most of the soil is schist. Schist has the ability to store up the heat of the day and redistribute it throughout the night, thus reducing temperature variations and helping the grapes to ripen properly.
Tasting notes
The color is dark ruby, almost crimson. The bouquet is expressive, with aromas of flowers and ripe red fruit, as well as cedar and spices. Elegant on the palate, with firm tannins and well-integrated acidity, the wine is well-balanced and long-lasting.
Pairing notes
Papa Figos is a wine to accompany all kinds of poultry, meats, cold meats and cheeses.
