Winemaking notes
After spontaneous alcoholic fermentation in steel there is a period of maceration on the skins. The malolactic fermentation that follows takes place in cement tanks. The wine then ages in 54 hl barrels of Slavonian oak
Viticultural notes
It is located in a position near the castle and it is the warmest and most sheltered area from the wind. Besides Sangiovese, there are Merlot, Vermentino and Trebbiano. The composition of the soil is mainly clayey, rich in skeleton. From these vineyards also come the grapes destined to the production of Vinsanto which, after harvesting, rest in the passitaia, a rural building provided with perfect ventilation.
Tasting notes
Intense ruby red. Strong notes of cherry with floral accents. On the palate, full fruit and pleasant freshness. Tannins are supported by a lovely freshness and full fruit. Tannins are felt but not aggressive. Wine Spectator 92 pts
Pairing notes
Perfect with traditional Tuscan dishes such as ribollita and papa al pomodoro. Pairs well with grilled white and red meats.
