Winemaking notes
Harvested September 21, 2024, this Riesling is among the last whites picked, requiring careful monitoring to capture grapes at optimal ripeness before they split. Hand-selected for superior quality, vinified in stainless steel at low temperature to preserve delicate aromatics.
Viticultural notes
100% Riesling grown on St. David's Bench VQA, Niagara-on-the-Lake since 1978. The heavier clay soils of this sub-appellation add depth and character. Responsible and sustainable farming throughout. Riesling, one of the world's noble white varieties, is here expressed in an elegant, approachable off-dry style.
Tasting notes
Pale yellow, clear and luminous. The nose is lively and expressive: green apple, lime and stone fruit intertwine with the characteristic floral lift of Riesling. The palate is generous and well-balanced, with residual sweetness harmoniously framed by fresh, vibrant acidity. The finish is long, fruity and refreshing.
Pairing notes
Serve chilled between 8–10 °C. Excellent as an aperitif or paired with lightly spiced dishes, lemon chicken piccata, Asian or Thai cuisine. Also makes a creative base for a white sangria. Best enjoyed young to appreciate its full freshness.
