Winemaking notes
In the heart of layon region, a magnificent south-south west exposure. Sloping vineyards of clay and gravelly soils with a subsoil of schist
Viticultural notes
100% Chenin Blanc. Harvesting by hand of the noble rot (botrytis) with 2 or 3
successive sortings.
Alcohol fermentation controlled by cold. Maturation in 400
litres oak casks for 6 months.
Tasting notes
An attractive old gold colour. Typical nose combining
pureed ripe fruits, lemon zets with exotic woods. To
taste, a fine expression of exotic fruit with a lively
mineral touch.
Pairing notes
Serve cool but not ice-cold. Decanting it for one hour
will bring out all its flavour. To serve with fried duck
or goose foie gras, exotic food, parsley chees or warm
fruit tarts.
