Winemaking notes
In the heart of layon region, on a siliceous slope with a magnificent south-south west exposure. Flinty clay.
Viticultural notes
The botrytised Chenin grapes are picked by hand. The whole process is adapted to the character of the grapes
in order to enhance as much as possible the bouquet and taste : careful harvesting, delicate crushing, the fermentation
is controlled by coldness ; Then, a thorough ageing takes place in 400 litres casks during 12 months.
Tasting notes
A gold-yellow colour, very intense. The bouquet gradually reveals its measure, with at first flowery (lime
blossom) ang vagetal aromas, then, after aeration, white fruits (peaches, pears, quinces ...) and citrus fruits
(grapefruit) appear to settle and last. A slight hint of woody vanilla, in the end, reinforces its fine flavour as a
great sweet wine. Richness, smoothness and persistence, together create a very typical wine.
Pairing notes
Serve between 10-12° degrees Celsius, decanted if possible in order to obtain the best of its potential.
It accompanies marvellously Foies gras, fillets of duck, hot fruit tarts and creams. It can be laid for decades.
