Winemaking notes
Vinification.............. Harvested by hand, carried by small trailers which unload the grapes by vibration to avoid crushing, then we use a sorting table to eliminate unripe or damaged grapes. Pneumatic winepress. Cool racking. The winemaking and aging : 60% in stainless steel vats with temperature-controlled fermentation. 40% in barrels (90% in 1,2 and 3 years old barrels, 10% in new and 1 year old barrels) for a period of 6 months.
Viticultural notes
This vineyard is located on the left bank of the Serein River in the Cote des Vaillons, and benefit from a excellent south-south east exposure. The soil is made up of kimmeridgien clay, a soil specific to the Chablis region. It is rich in fossil shells of a small oyster, Exogyra virgula, frequently found in Chablis soil. Density plantation: 6500 vines/ha. Average age of the vines: this cuvée comes from a parcel who was planted by Guy Moreau in 1934, therefore this vines is 77 years old.
Tasting notes
Vinous Magazine - The Vaillons Cuvée Guy Moreau 1er Cru emerges from a single parcel of vines planted in 1933 - the domaine's oldest. Rich, creamy and ample with a real sense of phenolic intensity, the Guy Moreau is a decidedly potent Chablis built on texture and weight.
