Winemaking notes
50 % of the harvest is hand picked and 50 % is through mechanical picking. Grapes (85 % Cabernet Sauvignon and 15 % Merlot) are sourced mostly vineyards in the Central Valley: coastal, southern and mountain estates add to the complexity of the wine. The wine is vinified in stainless steel tanks for 7 days, 100 % Malolactic Fermentation followed by an additional 4 months of ageing in steel tanks.
Viticultural notes
Isla Negra wines are made with grapes from throughout the Central Valley, which is made up of several small valleys ranging from Casablanca to Maule. These privileged and developed regions in the country, the Central Valley has a temperate Mediterranean climate with a dry and luminous ripening season, diverse soils, precise humidity and temperature patterns The soil composition is alluvial with good drainage and red clay depending on the estate.
Tasting notes
With an intense deep ruby red colour, this wine has a beautiful nose, expressing notes of plums that mingle with chocolate. The palate is elegant, full of flavor with soft tannins and a long aftertaste.
Pairing notes
This wine pairs well with red meats, pastas and mature cheeses.
