Winemaking notes
40 % of the harvest is hand picked and 60 % is processed through mechanical picking. 85 % Cabernet Sauvignon with 15 % of Merlot. Grapes are sourced from multi-climatic situated vineyards in the Central Valley. Fermentation lasts 7 days in tanks between 26 and 28 Celsius.
Viticultural notes
Grapes are sourced from the Central Valley. A Mediterranean climate with a long drying season. Alluvial and colluvial soils are predominant.
Tasting notes
Ripe prunes with soft notes of vanilla and chocolate. It has well balanced tannins that give it great texture and an all around structured finish.
Pairing notes
Enjoy with mature cheeses, pastas and a variety of red meat dishes.
