Winemaking notes
Blend of 85% Sauvignon (for fruitiness) and 15% Chardonnay (for richness). Pneumatic pressing after a short skin maceration. Static settling for 48 hours, followed by alcoholic fermentation in temperature-controlled stainless steel vats at 18-20°C for 12 days. Stored at 12°C on its fine lees until bottling.
Viticultural notes
The vines are spread over approximately 10 hectares of clay and silica soils on sand. This unusual blend combines the roundness of Chardonnay with the acidity and varietal aromas of Sauvignon Blanc, creating a complexity reminiscent of the grandeur of the Loire.
