Winemaking notes
After the harvest, the grapes are put in vats and they undergo a cold pre-fermentation followed by a long fermentation, all with temperature control. The aging lasts 16 months in oak barrels.
Viticultural notes
In the heart of the Clos des Mouches appellation, Chanson owns a parcel of 4.3 hectares. It is ideally situated on the slopes of Mont Saint-Désiré, facing south-east, on the edge of the Premiers Crus of Pommard. 2.5 hectares are planted with Pinot Noir on a limestone subsoil enhanced by a clay-loam soil.
Tasting notes
Beautiful ruby color. Intense aromas of ripe black and red cherries with hints of licorice and vanilla. Complex and fleshy. Dense texture. Beautiful aromatic expression. Well-built tannins. Good persistence on the finish.
Pairing notes
This wine will go wonderfully well with masticated red meats, dishes in sauce such as beef bourguignon and certain cheeses.
