Winemaking notes
Manual harvest in small crates, followed by meticulous sorting. Partial destemming (50%), then cooling of the grapes (8 to 10°C) for a 5-day cold pre-fermentation maceration. Fermentation in small stainless-steel tanks, with pigeage and pump-overs adapted to each appellation in order to extract colour and aromas. Gentle gravity pressing ensures a delicate extraction. Aging on fine lees in French oak barrels.

With a soil composed of clay, limestone, and sand, Domaine Chanson owns 3.8 hectares of this beautiful vineyard located in the heart of Beaune’s Premier Cru appellations.
Tasting notes
Beautiful ruby colour. Intense aromas of small red fruits with violet fragrances and spicy notes. Vibrant attack. Complex and deep, with a dense, juicy texture. Lovely long, spicy finish.
Pairing notes
Can be served with veal tenderloin accompanied by mushrooms (chanterelles, porcini), or wild boar stew. A perfect pairing with autumn dishes featuring game.
