Winemaking notes
Rigorous selection of berries followed by partial destemming (90%). Fermentation in stainless steel vats, with punching down and pumping over adapted to each appellation and each vintage in order to extract color and aromas. Aged on fine lees in stainless steel vats and French oak barrels (1 to 6 years old, 228L).
Viticultural notes
Grown on limestone and clay soils, the grapes come exclusively from vineyards located in the Côte de Nuits, from plots belonging to Domaine Chanson and from vineyards located south of the Côte de Beaune.
Tasting notes
Beautiful ruby color with purple hues. Very fresh aromas of ripe black cherry with hints of licorice. Complex, well-structured, and generous. Tight, silky texture with well-integrated tannins. Nice length with spicy notes.
Pairing notes
An excellent everyday Burgundy, ideal with braised or roasted meats, pasta, and cheese.
