Winemaking notes
Les Clos is one of the most famous grands crus of Chablis. The plot covers 24.75 ha. The vines selected by Chanson are ideally located in the heart of the plot. They thus benefit from the mineral qualities of the upper part of the plot and the richness provided by the alluvial soils located in the lower part of the hillside.
Viticultural notes
The winter was quite mild. May began with a few frosts, without consequence, which quickly gave way to a nice mildness. The summer was marked by several long heat waves. On the plots made up of clay soils, the vines resisted the water stress better caused by the low accumulation of water. The harvest in Burgundy began around August 20, a historically early date for the region.
Tasting notes
Pale gold. Intense and very fresh aromas of lemon zest mixed with a mineral touch. Tense, precise and complex. Beautiful energy. Nice acidity on a well integrated minerality. Very nice persistence with notes of pear and spice.
Pairing notes
Foie gras, shellfish, fish and white meats as well as regional cheeses (Citeaux, Brillat-Savarin) and certain goat cheeses.
