Winemaking notes
The grapes are hand-harvested in small crates with sorting in the vineyard and at the winery. The wine is produced through gentle pressing followed by low-temperature settling in stainless steel tanks, using indigenous yeasts.
No corrective oenological practices are carried out: no enzymes, no chaptalization, no acidification, no fining and no filtration.
Ageing continues on fine lees for several months: approximately 7–8 months in barrels (65%) and tanks (35%), with the goal of preserving purity and natural expression.

Soils: limestone, marl, clay-limestone and schist
Tasting notes
A deep and complex white wine showing citrus, mandarin and spring blossom aromas.
The palate is both rounded and structured, with a precise texture and a lightly stony mineral character. The finish offers delicate bitterness and remarkable persistence, resulting in a fresh, vibrant and harmonious profile typical of great Roussillon whites.
