Winemaking notes
The Syrah was allowed to ripen slightly longer so it could be harvested at the same time as the Mourvèdre. This rare co-fermentation was made possible by the cool exposure of the selected Syrah plot. Destemming. Vatting of both grape varieties for 15 to 20 days. Manual punching down. Pneumatic pressing. Selection of pressings and transfer to barrels. Aged for 12 months, depending on the vintage, in 300-liter barrels. Stirring on the lees, racking.
Viticultural notes
A plot of pure schist in La Londe with a flaky texture veined with white quartz. A year marked by unpredictable weather! The winter was characterized by exceptional drought. The rains in May and June, however, reignited disease pressure in Pignans. Ultimately, this resulted in an uneven harvest, with some early-ripening varieties harvested alongside later-ripening ones, such as Mourvèdre and Cinsault.
Tasting notes
A still very youthful color, ranging from purple to violet. This wine expresses a true symphony of scents, with aromas of sweet spices like vanilla and roasted notes brought by well-integrated oak. After an initial impression of tart, minty freshness, the wine asserts itself with its body, power, and richness. The finish unfolds with a very smooth and indulgent character, offering a perfect balance of sweetness.

Servir entre 14 et 16°C, sur des viandes, grillées ou mijotées : Côte
de bœuf grillée au feu de sarment de vigne ou daube provençale et sa polenta.
