Winemaking notes
Clisson, south of Nantes, is Muscadet’s prettiest town with its Breton influences and romantic Italian feel. This wine is made from old vines on granite and harvested by hand. Pressing of whole bunches in a pneumatic press and selection of musts. Gentle cold settling. Fermentation with natural yeasts. Aged 24 months on lees, in underground vats.
Viticultural notes
100% Melon de Bourgogne grown on granite. Vineyard Plot selection from 50-year-old, low-yield vines. Organic wine. Tilling of soils and manual harvest, with sorting on the plot.
Tasting notes
Two years’ ageing on lees result in a creamy texture with notes of smokiness, candied citrus and sweet spices. Ideal for ageing
and pairing with food.
Pairing notes
Grilled fish, white meats and exotic cuisine.
