Winemaking notes
Ancestral vinification: gentle pressing immediately after harvest. Fermentation in oak barrels (¼ new), aged 12 months on fine lees with only 2 rackings performed according to lunar cycles. No fining, no filtration. Cave rest of 6 to 12 months after bottling for perfect integration.
Viticultural notes
Old-vine Sauvignon Blanc on flint-rich soils, AOC Sancerre, Chavignol. Naturally low yields. Cover crop between rows, organic fertilizers only. Certified organic farming. Henri Bourgeois family estate 10th generation in Sancerre since 1950. A benchmark domaine of the Loire Valley.
Tasting notes
Brilliant golden yellow. Delicate and complex nose: linden, verbena and subtle flint minerality a refined infusion of gunflint and lime. Well-balanced, fresh palate with grapefruit, almond, hawthorn blossom and coconut notes. Sophisticated oak, exotic touches and a long mineral finish.
