Winemaking notes
Strictly manual harvesting with selective sorting. Thermo-regulated vinification then aging 18 months in 100% new barrels.
Viticultural notes
Etymology of the word Sarpe: the Roman emperor Valerius Probus persisted in making "essarper" (uproot), cut and clear the hillsides of upper Saint-Emilion so that the vineyards are closest to the sun.
Tasting notes
Aromas of cherry, pepper and blond tobacco. Attack both clear and velvety, felted tannins coated with a light wood.
Gold medal, Concours Expression des Vignerons Bio de Nouvelle-Aquitaine 2019, mill. 2016
Pairing notes
Nice accompaniment to roasted red meats.
