Winemaking notes
Soft and progressive pressing in whole or lightly crushed grains, cold static settling with barreling of each parcel separately, fermentation in demi-muids with temperature control.
Viticultural notes
A multitude of plots on limestone gravel near the red wine terroirs (selection of areas with slightly higher percentages of clay and marl).
Tasting notes
Intense nose and very quickly, this mass stretches, refines, puts itself in suspension. The ranges are changing, of great precision. In the mouth it is square, straight, saline with a lot of vibrations. Drink young if you like the subtlety of a rock water or wait a few years for the floral and spicy flavors to develop.
Pairing notes
Serve with grilled poultry with ginger and lemongrass.
