Winemaking notes
Fermentation is carried out using whole clusters, allowing for a gentle extraction deep within the berries. The aim is to achieve a delicately managed structure, pushed almost to the northern limit of what Mediterranean grape varieties can offer, while remaining true to their identity. The process is intentionally slow and precise, focused on aromatic accuracy and purity.
Viticultural notes
The grapes come from a collection of parcels surrounding Jonquières and its neighbouring areas. Some vineyards belong to the deep historical roots of the estate, while others explore more recently cultivated land yet all are farmed with the same meticulous care. These varied soils, shaped by rural families and the rugged Mediterranean landscape, form a rich mosaic of identities.
Tasting notes
Les Nouveaux États d’Âme 2024 reveals itself as a lively, expressive and immediate wine, marked by contagious energy. The nose evokes fresh red berries, garrigue, Mediterranean herbs, and a subtle minerality. On the palate, it is open, talkative and generous, combining freshness, tension and vibrant fruit. The texture remains fine, elongated and almost airy, while expressing a clearly defined character.
