Low yields, manual harvesting, rosé de saignée, cold fermentation, aging in vats on fine lees.
Viticultural notes
The soil is mainly clayey with limestone pebbles but some plots are also composed of silica or sandstone which leads to an enormous diversity of expression. The vines are worked according to the rules of biodynamics and the estate was certified in Organic Agriculture until 2006. But Olivier Jullien gave up the certification for the sake of independence.
Tasting notes
Beautiful deep pink color. Nose of red fruits, slightly spicy, fine. A beautiful material in the mouth with a good aromatic presence which classifies it in the "rosé of gastronomy". Fat and well balanced. Perhaps decant if you want to taste it immediately after opening.
