Winemaking notes
The grapes are picked and vinified separately: Chardonnay in mid-September with fermentation and maturation at a temperature of 17°C in new French oak barrels for 10 months with weekly bâtonnages; and the Traminer in mid-October with fermentation in stainless steel tanks at a maximum temperature of 17° C. Assemblage happens 15 days before bottling.
Viticultural notes
The vineyards lie in the eponymous Fojaneghe estate situated in the communes of Mori and Isera (Trentino) at a height of 300 metres above-sea-level. The ground is typically basalt /limestone. Breezes from Lake Garda bring good temperature variations from night to day and excellent general ventilation in the vineyards.
Tasting notes
Bright pale straw yellow colour with gold reflections. Tropical fruit and flowers on the nose with intense aromas of vanilla and sweet spices. Smooth structure on the palate, well balanced with great acidity. Full and long lasting on the finish. The wine is then matured for 10 months in French oak barriques and 2 months in stainless steel containers then 4 months in bottle.
Pairing notes
Good with a variety of foods that include fish, shellfish, pasta, risotto, vegetable flans, eggs, and cheese (young or soft).
