Winemaking notes
70% Corvina, 25% Rondinella, 5% Molinara. 24 months with 80% aged in Slavonian oak barrels of 40-80 hl and 20% in small Allier and Slavonian oak barrels (40% new, 30% second usage, 30% third usage). The wine is then bottle-aged for a minimum of 4 months. Ageing potential 30-35 years.
Viticultural notes
Harvesting in 2007 took place slightly earlier than normal with slightly smaller quantities than usual, but with excellent quality grapes. Weather conditions for the appassimento process were ideal as well in the Valpolicella region in 2007. A mild winter, infrequent rain, low relative humidity values and a natural occurrence of botrytis are promising signs for an exceptionally good vintage.
Tasting notes
Deep opaque red with violet tinged edges. Rich, powerful bouquet with aromas of baked fruit, cooked with herbs and spices. The alcohol content plays its usual role in cutting the sweetness on the palate. Cherry fruit preserve and cinnamon are the major components in a long-lasting and attractive finish.
Data analysis Alcohol 14.72 % by vol., residual sugar 9.2 g/l, dry extract 32.9 g/l, total acidity 5.9 g/l, pH 3.62.
Pairing notes
Amarone is a full-bodied wine for grilled or roasted red meats, game, and strong tasty cheeses, such as parmesan. Generally considered a wine for meditation, it is a great after-dinner wine. Recommended drinking temperature 20°C (68° F).
