Winemaking notes
Manual harvest is followed by fermentation for 17–18 days in 55 hl oak vats, with a gentle shower system to wet the cap, at controlled temperatures between 30 °C and 27 °C. Malolactic fermentation takes place in vat. The wine then matures for a minimum of two years, including 18 months in large casks, before refinement in bottle.
Viticultural notes
Sourced from the Faset vineyard in Barbaresco, planted in 1965 and covering one hectare. Vines are Guyot-trained with a density of 4,500 per hectare. The greyish-white calcareous marl soil, rich in magnesium and manganese, is interlaced with sandy veins. With a southwest exposure at 210–270 m, yields are controlled by thinning to 6–7 bunches per vine.
Tasting notes
The wine shows a brilliant garnet color. The bouquet is ample and aristocratic, with notes of dried rose petals, small red fruits, and elegant mineral nuances enriched by fine spices. On the palate, it offers structure and balance, with marked minerality, silky tannins, and a dense yet refined texture that lingers on the finish.
Pairing notes
Best served at 18 °C to highlight its complexity. A refined pairing with wild rabbit and juniper, roast pheasant, or traditional agnolotti with roast sauce. It also harmonizes with aged cheeses, allowing its minerality and elegant tannins to shine. A wine of remarkable finesse and structure, ideal for both immediate enjoyment and long aging.
