Winemaking notes
Alcoholic fermentation takes place in large oak vats with maceration lasting approximately 22 days at a controlled temperature, with gentle pumping over of the cap. Malolactic fermentation is carried out in vats. Aging lasts at least 6 years, including approximately 3 years in large casks, followed by extended bottle aging to develop complexity and aging potential.
Viticultural notes
This wine comes from the Cerequio vineyard, located between La Morra and Barolo, one of the appellation’s most prestigious terroirs. The mineral-rich marl-limestone soils promote slow ripening of the Nebbiolo grapes. The grapes are hand-harvested and rigorously selected to ensure a limited production of the highest quality.
Tasting notes
A brilliant garnet color with subtle orange highlights. The nose is intense and complex, with notes of balsamic aromas, violets, dark berries, truffle, and delicate spices. The palate is rich and powerful yet elegant, with silky tannins, great balance, and remarkable length.
Pairing notes
Serve at around 18°C. Ideal with complex dishes, braised meats, game, truffles, risotto, or aged cheeses. This Barolo Riserva has excellent aging potential and gains in complexity after a few years in the cellar.
