Winemaking notes
Fermentation takes place partly in stainless steel tanks and partly in small barrels at about 17°C for three weeks. The wine matures for about one year, partly on fine lees in tank and partly in barrels, followed by 12–18 months of bottle ageing to enhance complexity, structure and ageing potential.
Viticultural notes
Made from Cortese grown in Tassarolo on dark clay-calcareous soils rich in iron and pebbles. Vines planted in 1971 are hand harvested after summer thinning to control yields. Equalitas certified, the estate follows sustainable practices to ensure healthy grapes and perfect balance.
Tasting notes
Bright straw yellow with golden reflections. The nose is intense and complex, with floral aromas, grapefruit, anise and acacia honey, supported by elegant mineral notes. The palate is rich and enveloping, well balanced with remarkable freshness, long persistence and a refined, savoury finish.
Pairing notes
Serve at 10–12 °C. Excellent with fish, seafood, pasta with pesto, white meats and roasted dishes. Its freshness and structure also allow pairing with more complex cuisine and give the wine good ageing potential.
