Winemaking notes
Hand-harvested grapes from Vinya Més Alta were gently pressed by gravity using a pneumatic press, with each variety vinified separately. Fermentation took place in cement tanks with native yeasts at 17–22°C for 9–15 days. Aged nine months in tank, followed by 42 months on lees. No malolactic fermentation. Bottled as Brut Nature with no dosage.
Viticultural notes
From a 2.34-ha parcel in Sant Sadurní d’Anoia, planted in 2002 on marine-origin calcareous soils rich in pebbles. Organic and biodynamic farming with no irrigation. Compost from cow and donkey manure, biodynamic preparations and minimal phytotherapy treatments. Balanced vine growth led to a healthy, low-yield harvest in late August and early September.
Tasting notes
A precise and vibrant Brut Nature, reveals marked tension and pronounced minerality. The mousse is fine and persistent, leading to a dry, linear and structured palate. Freshness, depth and aromatic purity are beautifully balanced, reflecting both the calcareous soils and the carefully managed ripeness of the vintage.
Pairing notes
Serve at 8–10°C. Ideal as an aperitif or paired with seafood, grilled fish and Mediterranean cuisine. Its dry structure and mineral backbone make it particularly suited to refined dishes requiring freshness and precision.
