Winemaking notes
A short cold maceration of 4 hours is carried out before pressing to extract the most delicate primary aromas. The must is then transferred to a settling tank for 12 hours before being moved to fermentation tanks, where fermentation takes place at a controlled temperature of 16–18 °C. This gentle, slow process helps to preserve the fruit’s integrity and the vibrant freshness that define this Chardonnay.
Viticultural notes
This Chardonnay is made from carefully selected grapes grown in vineyards influenced by a mild Mediterranean climate, where warm, sunny days alternate with cooler nights, ensuring balanced ripening and the preservation of natural freshness. The predominantly calcareous and clay-sandy soils enhance the varietal purity of the grapes, imparting both tension and a refined minerality to the wine.
Tasting notes
Particular Chardonnay shows a pale yellow color with greenish hues. The nose offers elegant and intense aromas, marked by pure varietal notes on a clean and expressive background. On the palate, it is dry and supple on entry, supported by lively acidity that delivers freshness and balance. The wine is well-structured, aromatic, and persistent, reflecting both precision and purity.
Pairing notes
Serve well chilled, between 8 and 10 °C, to highlight its bright, fresh character. Pairs beautifully with grilled fish, seafood, fresh salads, and light summer dishes.
