Winemaking notes
The wine was fermented in mostly new oak barrels, but grapes from the Elgin vineyard (59%) add a balancing component of fresh, zesty acidity. The Overberg vineyard (23%) has Tafelberg sandstone, whose stony soils bring a flint minerality to the wine. All the grapes were picked by hand and transported to the winery.
Viticultural notes
The Overberg vineyard (23%) has Tafelberg sandstone, whose stony soils bring a flint minerality to the wine. The Malmesbury shale soils at Paarl (18%) have excellent water retention and produce rich, flavorful berries that result in elegant, well-balanced wines. The grapes for this wine come from three vineyards in the Western Cape region: Elgin, Overberg and Paarl respectively.
Tasting notes
This wine has the classic notes of lemon & grapefruit you'd expect from Chardonnay, with hints of almond & a fine, mineral finish.
Pairing notes
Excellent with flavorful fish dishes, bouillabaisse, scallops and calamari.
