Winemaking notes
The grapes were sorted stringently in the vineyards and fermented in static fermenters with automatic pump-overs. Malolactic fermentation finished on French oak, and was matured for a further 10 months, after which it was racked for bottling. ANALYSIS: Alc: 13.72% R/S: 2.3g/l T/A: 5.4g/l pH: 3.59h
Viticultural notes
100% Cabernet Sauvignon, cropped at 12 t/ha. Sandstone soils in the Karoo district. Trellised on the 4 Wire Perold system, with drip irrigation controlled by tensiometers. Harvesting is done by both hand and machine, but only at night.
Tasting notes
Beautifully aromatic and perfectly balanced with soft plum and ripe summer berry flavours followed by a round finish.

A food-friendly wine. Try with braised beef, roast chicken, beef Carpaccio, or blue Cheese.
