Winemaking notes
Hand-harvested in small crates and immediately stored at controlled temperature to preserve aromatic freshness. Vinification in temperature-controlled stainless steel tanks. Alcoholic fermentation begins with home-bred indigenous yeasts and ends with selected yeasts. Aged on fine lees to build texture, richness and aromatic complexity.
Viticultural notes
100% Pecorino selected from vineyards in Ascoli Piceno and Offida, Offida DOCG appellation, Le Marche. Guyot-trained vines at 5,000 plants per hectare, planted on medium-textured, sandy-tending soils between 200 and 300 metres above sea level. Yields controlled at 75 quintals per hectare and 1.5 kg per vine. First vintage bottled in 2011.
Tasting notes
Bright straw yellow with greenish highlights. The nose is expressive and fruit-forward: banana, pineapple and apple take centre stage, complemented by delicate vegetal hints of fresh cut grass. The palate is remarkably fresh, savoury and well-structured, with white and yellow pulp fruit flavours and a pleasant vegetal nuance in support. The finish is long and lingering.
Pairing notes
Serve between 10–12 °C. A natural match for grilled fish, seafood, vegetable risotto, pasta with seafood, vegetarian cuisine and fresh cheeses. Best enjoyed within 3 to 5 years to fully appreciate its aromatic vibrancy and natural freshness.
