Winemaking notes
The wine is a blend of Cabernet Sauvignon (78 %), Petite Sirah (19 %) and Petite Verdot (3 %); percentages slightly differ from each vintage. Wine was pressed on the skins after 7-12 days. Varietals were fermented separately in upright stainless steel fermenters and pumped over twice daily. Aged for 16 months in a combination of French, American and neutral oak barrels as well as stainless steel tanks to add fruit vibrancy.

Livermore Valley’s unique East-West orientation, well-drained rocky soils, and unique mesoclimates, the Southern Hills vineyards are located in the most desirable settings with exposures ideal for growing Cabernet Sauvignon of distinct character, depth and intensity. The Estate Grown Southern Hills Cabernet Sauvignon is named for our vineyards located along the southern hills of the Livermore Valley. The Wente family farms approximately 400 acres of Cabernet Sauvignon vineyards using the two clones originating from California wine pioneer Charles Wetmore’s Bordeaux cuttings in the 19th century.
Tasting notes
The bouquet has welcoming aromatics of warm baking spices. On the palate this wine delivers ripe blackberry and fig with round, smooth tannins.

Pairs very well with grilled cheese, tomato soup and a club sandwich.
