Winemaking notes
After manual harvesting, grapes are sorted, de-stemmed and vatted. Extended maceration rounds and refines the tannins, with extraction carried out by manual punch-downs. Following malolactic fermentation and blending, the wine is aged in large foudres or conical vats for one year. A deliberate choice: Syrah plays a supporting role, allowing Grenache to express its full elegance and finesse.
Viticultural notes
Sourced from limestone, calcareous marl, clay and sandy safres soils, situated at mid-slope between the valley floor and the Dentelles de Montmirail, benefiting from cool airflow from the valley to the west of the village. Some old-vine Grenache parcels on sandy soils feature pre-phylloxera rootstocks. A blend of 90% Grenache Noir and 10% Syrah.
Tasting notes
Limpid garnet with brilliant highlights. The nose is highly refined, with a complex bouquet dominated by black pepper, green pepper and pink berries, underscored by a hint of liquorice. The palate is supple and silky, harmoniously weaving elegant notes of cinnamon and liquorice candy. Rated 92+ points by Wine Advocate (2024).
Pairing notes
Serve at 16°C. Pairs beautifully with veal chops with morel mushrooms or crispy lamb breast. Also excellent with herb-roasted pork or rustic strawberry-rhubarb tart. A refined and elegant Gigondas, enjoyable now or cellared for 8 to 12 years.
