            Winemaking notes
        
        
        The Pinot Grigio grapes are picked at the end of the month of February and lightly dried for 15 days to intensify their acidity content. The grapes are then pressed and the must refrigerated down to 5°C. After 20 hours settling the racked must is inoculated with selected yeasts. Vinification happens in stainless steel at temperatures between 15-17°C with micro-oxygenation. Torrontés is a later ripening variety and the grapes are de-stalked and refrigerated down to 5°C in a cold maceration process for several hours. After soft pressing the must is left for about 20 hours settling. Fermentation then follows at temperatures between 15-17°C with micro-oxygenation. Both grape-types are cooled at harvest with dry ice, a technique used to better preserve the aromas. The resulting wines are racked before the final blend is assembled. 6 months in stainless steel tanks and at least 45 days in bottle.
        
            Viticultural notes
        
        
        Organically cultivated vineyards located in the famous wine-producing area of Mendoza, western Argentina, and lying at an altitude of 950-1050 metres above-sea-level in the Tupungato valley. The ground is stony, sandy and chalky. Low organic substance and good mineral content.
        
            Tasting notes
        
        
        Pale straw yellow. Rich bouquet on the nose with intense aromas of pineapple and tropical fruit. Refreshing on the palate with good structure and citrus fruit aromas balanced by attractive acidity and finishing with hints of pink grapefruit.
        
            Pairing notes
        
        
        Excellent with strong flavored fish (tuna and shellfish), white meats and grilled vegetables. Matches perfectly with oriental food, particularly sushi and sashimi. Serve at 10°C.
