Winemaking notes
Hand-harvested on October 28, 2020, grapes are fermented at carefully controlled temperatures to preserve freshness and varietal expression. The wine is aged 12 months in French oak barrels, adding subtle complexity and silky texture while keeping the fruit at the forefront.
Viticultural notes
From St. David's Bench vineyard, nestled against the Niagara Escarpment. The limestone-influenced soils of this exceptional sub-appellation allow outstanding ripeness while maintaining balance and elegance. Sustainable farming practiced since 1978.
Tasting notes
Deep ruby red. The nose is expressive and refined: raspberry, red fruits, pipe tobacco, cedar and warm spices weave together harmoniously. The palate is structured yet elegant, with silky tannins and vibrant freshness. The finish is long, balanced and shows excellent ageing potential.
Pairing notes
Serve between 16–18 °C. Excellent with grilled lamb, roast beef or herb-crusted pork. Also pairs well with aged cheeses, mushroom dishes and roasted vegetables. Enjoy now or cellar for several years.
