Winemaking notes
The grapes are harvested very early in the morning to take advantage of the cool night air. After pressing, we perform cold static settling to remove suspended particles. Alcoholic fermentation takes place in stainless steel tanks at a low temperature of 16°C. The wines are then racked and aged in stainless steel tanks until bottling.
Viticultural notes
Location: Situated on the cool, light soils of the municipalities of Cairanne and Jonquières. Vineyard on alluvial soils between the Aigues and Ouvèze rivers in Vaucluse. Terroir: Recent alluvial soils of limestone origin, with variations due to the course of the rivers; stony clay-limestone.
Tasting notes
A lovely pale yellow color with delicate green highlights. This wine opens with an expressive nose featuring notes of white flowers, buttercream, and apricot. Fresh and lively on the palate, it opens with a beautiful attack, revealing seductive citrus aromas, well balanced by just the right amount of acidity. Its mineral purity is punctuated on the finish by a hint of delicate bitterness.
