Winemaking notes
This wine comes from high-altitude vines cultivated organically. After hand-harvesting on September 24th, the grapes are gently pressed and fermented in stainless steel tanks at controlled temperatures. It undergoes 12 months of bottle aging, developing floral and fruity notes. No oenological additives are used, and the wine contains less than 30 mg/l of total sulfites.
Viticultural notes
The 40 to 60-year-old vines are planted on calcareous and stony soils in the Montmell mountains, at 600 meters altitude. Cultivated organically, the vines are part of a biodiversity preservation effort. Hand-harvested, the grapes are carefully sorted before being transformed into a wine that honors both tradition and the environment.
Tasting notes
The Ancestral Montònega is characterized by its freshness and vibrant acidity. Its sparkling nature is balanced by a light, pleasant texture. White fruit aromas blend with delicate floral notes, while a subtle minerality reflects its calcareous origins. Though easy to drink, it reveals a surprising complexity on the palate.
Pairing notes
Best served between 6°C and 8°C, the Ancestral Montònega reveals its full freshness and delicate aromas when chilled. Perfect for aperitifs or light dishes, such as seafood or grilled fish. It also pairs well with outdoor meals, especially on sunny days, for a convivial experience.
