Winemaking notes
100 % Syrah is picked at moderate ripeness to retain elegance. Cool fermentation of whole berries at 20 to 22 Celcius creates a partial carbonic maceration which introduces a spice element to the pure Syrah perfume. The wine is matured in used 228L and 500L French oak for one year on fine lees, the oak is mainly from the Allier and Vosges forests.
Viticultural notes
Margaret River sits in the south-western corner of Australia, around 270 kilometres from Western Australia’s capital city of Perth. A long, narrow region, it is hugged by the Indian Ocean on the north, west and Southern Ocean to the south. This stunning stretch of land is one of the most geographically isolated wine regions in the world, bestowed with ancient soils and a unique biodiversity. Its geography, soils and Mediterranean climate combine to create ideal grape-growing conditions – heavy winter rainfalls, cool sea breezes that give vibrancy to the fruit and a long, dry ripening season.
Tasting notes
Aromas of juicy black cherries and boysenberries with a grind of black pepper. The palate possesses a fine grained texture comprising of ripe tannin which adds to the texture and depth of the wine.
Pairing notes
Enjoy this wine with barbecued lamb chops, Shepherd's pie and stuffed mushrooms.
