Winemaking notes
The bunches are destemmed and lightly crushed. The varieties ferment separately in stainless steel tanks, with temperature control. The vatting lasts 8 to 10 days. After fermentation, the solid parts of the grape are pressed in vertical presses in a gentle, slow process that promotes the extraction of color and ripe tannins that reside in the skins.
Viticultural notes
Located in our Finca Ygay, in Rioja Alta, with a total area of 300 hectares around the winery, mainly clay-limestone soils with an altitude between 320 meters and 485 meters.
