Winemaking notes
The harvest is done at night, cold pre-fermentation maceration followed by slow pneumatic pressing. Fermentation takes place in stainless steel tanks at 16°C. Aging on lees lasts 3 months before bottling.
Viticultural notes
Pale straw yellow colour. The nose opens with notes of herbs, fennel and white pepper. Dry and refreshing on the palate, the wine is well balanced. The alcohol is moderate (12%) and the wine ends with a delicious mineral finish. Serving: 10°C
Pairing notes
Will go wonderfully with pasta, salads, poultry and fish.
