Winemaking notes
The grapes are harvested in the evening or early in the morning and transported to the winery, where they are destemmed and gently crushed before undergoing temperature-controlled fermentation in stainless steel tanks. Maceration lasts 8 to 10 days to achieve a perfectly balanced style. To preserve the grapes’ natural freshness, the wine is produced in an oxygen-free environment, inside sealed stainless steel tanks.
Viticultural notes
The grapes are organically grown at altitude in the northernmost part of central Castile, where the continental climate offers sunny days and cool nights. This temperature contrast produces grapes with intense fruit character and excellent varietal definition, while maintaining remarkable freshness. The vineyards are managed sustainably within an integrated ecosystem.
Tasting notes
A light ruby color, with a delicate bouquet of red fruits and violets, a fresh, fruity palate, medium-bodied, round and juicy, followed by a long, pleasant finish.

This harmonious, well-balanced wine pairs particularly well with spicy meat dishes, stews, grilled foods, as well as a variety of cheeses.
