Winemaking notes
The grapes are harvested at night and during the early morning hours to preserve their natural freshness. A short pre-fermentative cold maceration is followed by gentle pneumatic pressing and fermentation in stainless steel tanks at around 16°C. Malolactic fermentation is prevented in order to maintain tension and vibrancy. The wine then remains on fine lees for several months before bottling.
Viticultural notes
This organic Verdejo is produced from vineyards located in Uclés, Castile, at elevations between 700 and 800 meters. The continental climate, with warm days and cool nights, allows slow ripening while preserving freshness and aromatic intensity. The vineyards are farmed organically and sustainably within a natural ecosystem surrounded by century-old oak trees.
Tasting notes
Shows a bright pale yellow color and reveals an intense nose dominated by exotic fruit, floral notes, fresh fennel and white pepper. On the palate, it is dry, fresh and aromatic, offering a balanced profile between fruit and acidity, supported by a persistent finish with subtle mineral notes.
Pairing notes
Pairs well with fish, poultry, salads, grilled vegetables and light summer dishes. It is best served between 8 and 10°C to fully express its freshness and aromatic profile.
