Winemaking notes
Established in 2001 in bucolic western Sonoma County, Avalon offers approachable, delicious wines of unmatched quality. Thoughtful vineyard selection from California’s top winegrowing regions combined with intuitive winemaking methods assure that Avalon wines are beautifully balanced and effortlessly enjoyable.
Viticultural notes
Approximately 30 miles in length, Napa Valley hosts a variety of microclimates and soil types ideal for the cultivation of world-class Cabernet Sauvignon. We harvest during the cool, nighttime hours and deliver our grapes straight to the winery where they are de-stemmed and cold-soaked for a few days prior to fermentation. Post fermentation, the wine was racked into French oak for 12 months of aging.
Tasting notes
Vibrant aromas of blackberry and juicy plum mingle with notes of violet and vanilla. A silky texture on the palate frames generous flavours of ripe red raspberry and black cherry. Supple tannins are beautifully integrated with the dark fruit flavours leading to a smooth, lingering finish.
Pairing notes
Braised beef short ribs, roasted vegetable tarts, grilled rib-eye steak or aged Gouda cheese
